- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 4 cups vegetable broth
- 1 (15 oz) can cannellini beans, rinsed and drained
- ½ cup ditalini pasta
- ½ cup heavy cream (or milk for a lighter version)
- 1 tsp dried oregano
- ½ tsp dried basil
- Salt and freshly ground black pepper to taste
- Fresh parsley or basil, chopped (for garnish)
- Parmesan cheese, grated (for serving)
Preparation
Step 1
Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook until softened, about 5-7 minutes. Stir in minced garlic, oregano, and basil; cook for 1 minute until fragrant.

Pour in the crushed tomatoes and vegetable broth. Bring the mixture to a simmer. Add the rinsed and drained cannellini beans.
