Creamy Tomato and Bean Soup

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can cannellini beans, rinsed and drained
  • 3 cups vegetable broth
  • ½ cup heavy cream (or ½ cup milk/dairy-free alternative for lighter option)
  • 1 tsp dried basil
  • ½ tsp dried oregano
  • ¼ tsp red pepper flakes (optional)
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper, or to taste
  • Fresh basil or Parmesan for garnish

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook for 5-7 minutes until softened and translucent.

    Add minced garlic and cook for another minute until fragrant, being careful not to burn it.

    Stir in the crushed tomatoes, rinsed cannellini beans, vegetable broth, dried basil, oregano, and red pepper flakes (if using). Bring to a simmer, then reduce heat to low, cover, and let it cook for 15 minutes to allow the flavors to meld.

    Remove from heat. Using an immersion blender, carefully blend the soup until it reaches your desired creaminess (you can blend it completely smooth or leave some texture from the beans). Alternatively, transfer batches to a regular blender and blend until smooth, then return to the pot.

  5. Step 5

    Stir in the heavy cream. Season with salt and pepper to taste. Heat gently for a few more minutes, but do not boil after adding cream. Serve hot, garnished with fresh basil or grated Parmesan.
