  • 2 tablespoons olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can cannellini beans, rinsed and drained
  • 3 cups vegetable broth
  • 1/2 cup heavy cream (or plant-based cream for dairy-free)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil or Parmesan for garnish (optional)

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.

    Stir in minced garlic, oregano, basil, and red pepper flakes (if using). Cook for 1 minute until fragrant. Do not burn the garlic.

    Add the crushed tomatoes, rinsed cannellini beans, and vegetable broth. Bring the mixture to a simmer, then reduce heat, cover, and let it gently bubble for 15 minutes to allow the flavors to meld.

    Remove from heat. Carefully use an immersion blender to blend the soup until smooth and creamy. Alternatively, transfer portions to a regular blender (be careful with hot liquids) and blend until smooth, then return to the pot.

  5. Step 5

    Stir in the heavy cream. Taste and season with salt and black pepper as needed. Reheat gently if necessary (do not boil after adding cream). Serve hot, garnished with fresh basil or a sprinkle of Parmesan if desired.
