  • 1 lb Italian sausage (mild or hot), casings removed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (28-oz) can crushed tomatoes
  • 1/2 cup chicken broth
  • 1/2 tsp dried oregano
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 10 oz rigatoni or other tubular pasta
  • Salt and black pepper to taste

Preparation

  1. Step 1

    Bring a large pot of salted water to a boil. Cook rigatoni according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.

    Stir in crushed tomatoes, chicken broth, and oregano. Bring to a simmer, then reduce heat to low and let it gently cook for 10-15 minutes, allowing flavors to meld.

    Stir in heavy cream and 1/4 cup Parmesan cheese until melted and smooth. Return the cooked sausage to the sauce. Add the drained rigatoni and toss to coat. If the sauce is too thick, add a splash of reserved pasta water until desired consistency is reached.

  6. Step 6

    Serve hot, garnished with fresh basil and extra Parmesan cheese.
