- 1 tbsp olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1/2 cup dry white wine or chicken broth
- 2 cups vegetable broth
- 1 cup orzo pasta
- 1/2 cup heavy cream
- 1/2 cup crumbled feta cheese, plus more for serving
- 1/4 cup fresh basil, chopped, plus more for garnish
- Salt and black pepper to taste
Preparation
Step 1
Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook until softened, about 5-7 minutes.
Step 2
Add minced garlic and cook for 1 minute until fragrant. Stir in the diced tomatoes (with their juices) and white wine (or chicken broth), bringing it to a simmer. Cook for 2-3 minutes, scraping any browned bits from the bottom of the pot.

Pour in the vegetable broth and bring to a boil. Add the orzo pasta, stirring well. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, stirring occasionally, until the orzo is al dente and most of the liquid has been absorbed. If it looks too dry, add a splash more broth or water.
Step 4
Remove from heat. Stir in the heavy cream, 1/2 cup of crumbled feta cheese, and the chopped fresh basil. Stir until the feta is slightly melted and the sauce is creamy.
Step 5
Taste and season with salt and black pepper as needed. (Feta is salty, so taste before adding too much salt!)
Step 6
Serve immediately, garnished with extra crumbled feta and fresh basil.

- Stir the orzo frequently while cooking to prevent it from sticking to the bottom of the pot.
- For a spicier kick, add a pinch of red pepper flakes with the garlic.
