  • 12 oz pasta (fettuccine, penne, or fusilli work well)
  • 2 tbsp olive oil (or oil from sun-dried tomato jar)
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes (packed in oil), drained and chopped
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional, for a little heat)
  • 1/2 cup vegetable broth or chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tbsp fresh basil, chopped, for garnish
  • Salt and black pepper to taste

Preparation

  1. Step 1

    Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining. Set aside.

  2. Step 2

    While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium heat. Add minced garlic and chopped sun-dried tomatoes. Sauté for 2-3 minutes until fragrant.

  3. Step 3

    Stir in the dried oregano and red pepper flakes (if using). Cook for another minute.

  4. Step 4

    Pour in the vegetable broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Let it reduce slightly for about 2-3 minutes.

    Reduce heat to low, then stir in the heavy cream and grated Parmesan cheese. Cook, stirring constantly, until the sauce thickens slightly, about 2-3 minutes. Do not boil.

  6. Step 6

    Add the drained pasta to the skillet with the sauce. Toss to coat evenly. If the sauce is too thick, add a splash or two of the reserved pasta water until it reaches your desired consistency.

  7. Step 7

    Season with salt and black pepper to taste. Serve immediately, garnished with fresh basil and extra Parmesan cheese.
