- 12 oz short pasta (penne, rotini, or orecchiette)
- 1 tbsp olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
- 1 (14 oz) can artichoke hearts, drained and roughly chopped
- 1 (8 oz) block cream cheese, softened
- ½ cup sour cream
- 1 cup milk (any kind)
- ½ cup chicken or vegetable broth
- 1 cup grated Parmesan cheese, divided
- 1 cup shredded mozzarella cheese, divided
- ½ tsp red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
Preparation
Step 1
Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.

Cook pasta according to package directions until al dente. Drain and set aside.

While pasta cooks, heat olive oil in a large skillet or pot over medium heat. Add diced onion and cook until softened, about 5 minutes. Add minced garlic and red pepper flakes (if using), cook for 1 minute until fragrant.

Stir in the thawed and squeezed dry spinach, and chopped artichoke hearts. Cook for 2-3 minutes, stirring to combine.

Add softened cream cheese, sour cream, milk, and broth to the skillet. Whisk until the cream cheese is fully melted and the sauce is smooth. Bring to a gentle simmer. Remove from heat.
Step 6
Stir in ¾ cup of the Parmesan cheese and ¾ cup of the mozzarella cheese into the sauce. Add the cooked pasta and toss to coat everything evenly. Season with salt and pepper to taste.

Pour the pasta mixture into the prepared baking dish. Sprinkle the remaining ¼ cup Parmesan and ¼ cup mozzarella over the top.

Bake for 20-25 minutes, or until bubbly and the cheese on top is golden brown and melted. Let rest for 5 minutes before serving.
