- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine or chicken broth
- 1 1/2 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus extra for serving
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste

Step 1
Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.

While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Step 3
Reduce heat to medium. Add chopped onion to the skillet and cook until softened, about 3-5 minutes. Add minced garlic and cook for 1 minute more until fragrant.

Pour in white wine (or broth) and scrape up any browned bits from the bottom of the pan. Let simmer for 2-3 minutes until slightly reduced.

Stir in chicken broth and heavy cream. Bring to a gentle simmer, then reduce heat to low. Stir in the Parmesan cheese until melted and a smooth sauce forms.

Add the cooked pasta and chicken back to the skillet. Toss to coat everything in the creamy sauce. If the sauce is too thick, add a splash or two of the reserved pasta water until desired consistency is reached.

Stir in chopped fresh parsley. Season with salt and pepper to taste. Serve immediately, garnished with extra Parmesan if desired.
