  • 1 tsp Dijon mustard (optional, for depth of flavor)
  • ½ tsp onion powder
  • Salt and freshly ground black pepper to taste
  • 8 oz sharp cheddar cheese, shredded
  • 4 oz Gruyère cheese, shredded (or more cheddar)
  • 5 oz fresh spinach

Preparation

    Cook pasta according to package directions until al dente. Drain well and set aside.

    While pasta cooks, melt butter in a large pot or Dutch oven over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
