Ingredients

For the Creamy Black Beans
- 1 tbsp olive oil
- 1 small red onion, finely diced
- 2 cloves garlic, minced
- 1 (15-oz) can black beans, rinsed and drained
- 1/2 cup vegetable broth
- 1-2 tbsp chipotle in adobo sauce (from a can), minced, plus 1 tsp adobo sauce (adjust to spice preference)
- 1/2 tsp ground cumin
- 1/4 cup cream cheese, softened
- Salt and black pepper to taste
For the Lime Crema
- 1/2 cup sour cream or plain Greek yogurt
- Juice of 1 lime
- 1 tbsp chopped fresh cilantro
- Pinch of salt
For Serving
- 8-12 small flour or corn tortillas
- 2 cups pre-shredded coleslaw mix or finely shredded cabbage
- Fresh cilantro, chopped (optional)
- Avocado slices (optional)
Preparation
Step 1
Make the Lime Crema: In a small bowl, whisk together sour cream (or Greek yogurt), lime juice, chopped cilantro, and a pinch of salt. Set aside.

Make the Creamy Black Beans: Heat olive oil in a medium skillet over medium heat. Add red onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.

Stir in the rinsed black beans, vegetable broth, minced chipotle in adobo, adobo sauce, and cumin. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the liquid has reduced slightly and the flavors have melded.

Reduce heat to low and stir in the softened cream cheese until fully melted and combined, creating a creamy sauce. Season with salt and pepper to taste.

Warm tortillas according to package directions (microwave, oven, or dry skillet). Fill each tortilla with a spoonful of the creamy black beans, top with shredded coleslaw mix, a drizzle of lime crema, and optional fresh cilantro and avocado slices. Serve immediately.
