  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1/2 cup uncooked wild rice blend
  • 1/2 tsp dried thyme
  • 1/4 tsp dried rosemary
  • 1/2 cup heavy cream (or milk for a lighter version)
  • 1/4 cup all-purpose flour
  • 1/2 cup water or additional broth
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium heat. Add diced chicken and cook until no longer pink, about 5-7 minutes. Remove chicken and set aside.

    Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes. Stir in minced garlic, thyme, and rosemary, and cook for another minute until fragrant.

    Pour in the chicken broth and add the wild rice. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until wild rice is tender (check package directions for specific cooking time).

  4. Step 4

    While the rice cooks, in a small bowl, whisk together the flour and 1/2 cup cold water or broth until smooth. This is your slurry.

  5. Step 5

    Once rice is tender, stir the cooked chicken back into the soup. Gradually whisk in the flour slurry and the heavy cream. Continue to cook, stirring occasionally, for 5-7 minutes, until the soup thickens to your desired consistency.

  6. Step 6

    Season generously with salt and black pepper to taste. Serve hot, garnished with fresh parsley if desired.

  • Using a good quality wild rice blend with different rice types adds more texture and visual appeal.
  • For a faster version, use pre-cooked rotisserie chicken and add it in step 5.
  • If you prefer a thicker soup, you can add an extra tablespoon of flour to your slurry.
