Creamy Chicken & Spinach Pasta

  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 4 cups chicken broth
  • 12 oz pasta (penne, rotini, or fettuccine work well)
  • 5 oz fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and black pepper to taste

Preparation

  1. Step 1

    Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken from the skillet and set aside.

  2. Step 2

    Add chopped onion to the skillet and cook until softened, about 3-5 minutes. Stir in minced garlic, oregano, and red pepper flakes (if using) and cook for another minute until fragrant.

  3. Step 3

    Pour in the chicken broth and bring to a boil. Add the uncooked pasta, stir well, and reduce heat to medium-low. Cover and simmer for 10-12 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.

  4. Step 4

    Return the cooked chicken to the skillet. Stir in the fresh spinach, heavy cream, and Parmesan cheese. Cook, stirring, until spinach has wilted and the sauce has thickened slightly, about 2-3 minutes.

  5. Step 5

    Season with salt and black pepper to taste. Serve hot, garnished with extra Parmesan cheese.

Tips

  • For an extra layer of flavor, deglaze the pan with a splash of white wine after cooking the onions and garlic.
  • If the sauce gets too thick, add a splash more chicken broth or water to reach your desired consistency.
