  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 large onion, chopped
  • 8 oz cremini (baby bella) mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk (whole milk recommended)
  • 1/2 cup heavy cream (or half-and-half)
  • 1/2 cup frozen peas (optional)
  • 2 tbsp fresh parsley, chopped, for garnish
  • Salt and black pepper to taste

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Season chicken pieces with salt and pepper. Add chicken to the pot and cook until lightly browned, about 5-7 minutes. Remove chicken from the pot and set aside.

    Add butter to the pot. Once melted, add chopped onion and sliced mushrooms. Cook, stirring occasionally, until vegetables are softened and mushrooms have released their liquid and browned, about 8-10 minutes.

    Stir in minced garlic and cook for 1 minute until fragrant. Sprinkle flour over the vegetables and stir constantly for 1-2 minutes to cook out the raw flour taste.

    Gradually whisk in the chicken broth, then the milk, ensuring no lumps form. Bring the soup to a gentle simmer, stirring frequently, until it starts to thicken, about 5-7 minutes.

    Return cooked chicken to the pot. Stir in heavy cream and frozen peas (if using). Continue to simmer for another 3-5 minutes, allowing chicken to heat through and flavors to meld.

    Taste and adjust seasoning with additional salt and pepper as needed. Ladle into bowls, garnish with fresh parsley, and serve warm.
