- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 8 oz cremini or button mushrooms, sliced
- 1/2 yellow onion, chopped
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for serving
- 2 tbsp fresh parsley, chopped
- Salt and black pepper to taste
Preparation
Step 1
Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water before draining.
Step 2
While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken cubes and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Step 3
Add sliced mushrooms to the same skillet and cook until softened and browned, about 5-7 minutes. Add chopped onion and cook until softened, about 3 minutes.
Step 4
Stir in minced garlic and cook for 1 minute until fragrant. Pour in chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 2 minutes.
Step 5
Reduce heat to low, then stir in heavy cream and Parmesan cheese. Cook for 2-3 minutes, stirring, until the sauce thickens slightly. Return cooked chicken to the skillet.
Step 6
Add the drained pasta to the skillet. Toss everything together, adding a splash of reserved pasta water if needed to reach desired sauce consistency. Stir in fresh parsley. Season with salt and pepper to taste. Serve immediately with extra Parmesan.

- For an extra layer of flavor, a splash of dry white wine can be added after cooking the mushrooms and before the chicken broth.
