It’s incredibly satisfying with its hearty texture, flavorful broth, and savory chicken. Plus, it's simpler to make than you might think, making it a perfect cozy weeknight meal.

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into ½-inch cubes
  • 1 small onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • ½ cup uncooked wild rice blend, rinsed
  • 6 cups chicken broth
  • ½ tsp dried thyme
  • ½ tsp dried sage
  • ¼ tsp black pepper
  • ½ cup heavy cream
  • ¼ cup chopped fresh parsley (for garnish and serving)
  • Salt to taste

Preparation

  1. Step 1

    Heat olive oil in a large Dutch oven or soup pot over medium heat. Add chicken and cook until lightly browned, about 5-7 minutes. Remove chicken and set aside.

  2. Step 2

    Add onion, carrots, and celery to the pot. Sauté for 5-7 minutes until vegetables begin to soften. Add minced garlic and cook for another minute until fragrant.

  3. Step 3

    Stir in the rinsed wild rice, chicken broth, thyme, sage, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the wild rice is tender.

  4. Step 4

    Return the cooked chicken to the pot. Stir in the heavy cream. Heat through for 2-3 minutes, but do not boil.

  5. Step 5

    Taste and adjust salt as needed. Ladle into bowls, garnish with fresh parsley, and serve warm.

Tips

  • To make this soup even faster, use pre-cooked rotisserie chicken.
  • If you prefer a thicker soup, you can make a quick roux by whisking 1 tablespoon of flour into the softened vegetables before adding the broth.
