Creamy Chicken and Herb Pasta

Tender chicken, perfectly al dente pasta, and a luscious herb-infused cream sauce create a dish that feels fancy but is surprisingly easy to master. It's the perfect weeknight indulgence!

  • 12 oz penne or fettuccine pasta
  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tsp dried Italian seasoning
  • Salt and freshly ground black pepper to taste

Preparation

  1. Step 1

    Cook pasta according to package directions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.

  2. Step 2

    While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

  3. Step 3

    Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and Italian seasoning, cook for 1 minute until fragrant.

  4. Step 4

    Pour in the white wine (or 1/2 cup chicken broth), scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes to reduce slightly.

  5. Step 5

    Stir in the remaining 1 cup chicken broth and heavy cream. Bring to a gentle simmer. Add grated Parmesan cheese and stir until melted and smooth.

  6. Step 6

    Return the cooked chicken to the skillet. Add the drained pasta and toss to coat. If the sauce is too thick, add a splash or two of the reserved pasta water until desired consistency is reached.

  7. Step 7

    Stir in fresh parsley and chives. Season with salt and freshly ground black pepper to taste. Serve immediately, topped with extra Parmesan cheese.

Tips

  • Using good quality fresh herbs makes a big difference in this dish. Don't skip them!
  • If you don't have fresh herbs, you can use 1/2 teaspoon of dried mixed herbs added with the garlic and onion.
