  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups vegetable broth
  • 2 (15 oz) cans cannellini beans, rinsed and drained
  • 1 tsp dried Italian seasoning
  • 1/2 tsp dried thyme
  • 1/4 tsp red pepper flakes (optional)
  • 5 oz fresh spinach
  • Salt and freshly ground black pepper to taste
  • Grated Parmesan cheese, for serving (optional)
  • Crusty bread, for serving

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, diced carrots, and celery. Cook, stirring occasionally, until vegetables are softened, about 5-7 minutes.

    Stir in minced garlic, Italian seasoning, dried thyme, and red pepper flakes (if using). Cook for another minute until fragrant.

    Pour in the crushed tomatoes and vegetable broth. Add the rinsed and drained cannellini beans. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, allowing the flavors to meld.

    Stir in the fresh spinach a handful at a time, allowing it to wilt into the soup. Cook for another 2-3 minutes, until all the spinach has wilted.

  5. Step 5

    Taste and adjust seasoning with salt and black pepper as needed. If desired, use an immersion blender to partially blend the soup for a slightly creamier texture, leaving some beans whole for texture.

  6. Step 6

    Ladle hot soup into bowls. Serve with a sprinkle of grated Parmesan cheese and crusty bread for dipping.
