- 1 (15 oz) can cannellini beans, rinsed and drained
- 4 cups vegetable broth
- 1 tsp dried Italian seasoning
- 1/2 tsp dried rosemary (crushed, if whole)
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 2 cups fresh spinach or kale, roughly chopped
- Crusty bread for serving (optional)
Preparation
Step 1
Heat olive oil in a large pot or Dutch oven over medium heat.

Add the chopped onion, carrots, and celery to the pot. Sauté for 7-8 minutes, or until the vegetables have softened, stirring occasionally.

Stir in the minced garlic, Italian seasoning, dried rosemary, and red pepper flakes (if using). Cook for 1 minute more until fragrant.

Pour in the crushed tomatoes and vegetable broth. Add the rinsed cannellini beans. Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, allowing the flavors to meld and the vegetables to tenderize.
