  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can cannellini beans, rinsed and drained
  • 4 cups vegetable broth
  • 1 tsp dried Italian seasoning
  • 1/2 tsp dried rosemary (crushed, if whole)
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 cups fresh spinach or kale, roughly chopped
  • Crusty bread for serving (optional)

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium heat.

  2. Step 2

    Add the chopped onion, carrots, and celery to the pot. Sauté for 7-8 minutes, or until the vegetables have softened, stirring occasionally.

  3. Step 3

    Stir in the minced garlic, Italian seasoning, dried rosemary, and red pepper flakes (if using). Cook for 1 minute more until fragrant.

  4. Step 4

    Pour in the crushed tomatoes and vegetable broth. Add the rinsed cannellini beans. Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, allowing the flavors to meld and the vegetables to tenderize.

  5. Step 5

    Stir in the fresh spinach or kale, cooking for 2-3 minutes until wilted. Taste and adjust seasoning with salt and black pepper as needed.

  6. Step 6

    Ladle hot stew into bowls. Serve with crusty bread for dipping, if desired.

Tips

  • For a thicker stew, you can mash about a quarter of the white beans against the side of the pot after simmering.
