Ingredients

Yield: 4 servings

Main

  • 1 tbsp olive oil
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 2 (15 oz) cans cannellini beans, rinsed and drained
  • 4 cups vegetable broth
  • 8 oz short pasta (such as ditalini, small shells, or elbow macaroni)
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese (optional, for serving)
  • Fresh basil or parsley, chopped (for garnish)
  • Salt and black pepper to taste

Preparation

  1. Step 1

Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute until fragrant.

  2. Step 2

Stir in diced tomatoes (with their juices), chopped sun-dried tomatoes, rinsed cannellini beans, vegetable broth, uncooked pasta, dried oregano, and red pepper flakes (if using). Bring the mixture to a boil.

  3. Step 3

Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until the pasta is al dente and most of the liquid has been absorbed, stirring occasionally to prevent sticking.

  4. Step 4

Remove from heat. Stir in the fresh spinach until wilted. Season with salt and black pepper to taste.

  5. Step 5

Serve hot, garnished with fresh basil or parsley and a sprinkle of Parmesan cheese if desired.

Tips

  • Adjust the amount of red pepper flakes to your liking for a bit of heat.
  • For extra richness, a drizzle of good quality olive oil or a pat of butter at the end can elevate the flavor.
  • If you like, add some chopped Kalamata olives along with the sun-dried tomatoes for an extra briny punch.
