  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp dried thyme
  • 1/4 tsp red pepper flakes (optional)
  • 4 cups vegetable broth
  • 2 (15 oz) cans cannellini beans, rinsed and drained
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 5 oz fresh spinach
  • Salt and freshly ground black pepper to taste
  • Grated Parmesan cheese or crusty bread, for serving (optional)

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook, stirring occasionally, until vegetables are softened, about 5-7 minutes.

    Stir in minced garlic, Italian seasoning, dried thyme, and red pepper flakes (if using). Cook for 1 minute more until fragrant.

  3. Step 3

    Pour in vegetable broth, rinsed cannellini beans, and diced tomatoes (with their liquid). Bring the soup to a simmer, then reduce heat to low, cover, and let it cook for 10-15 minutes, allowing the flavors to meld.

    Stir in the fresh spinach until it wilts completely, which should only take 1-2 minutes. Season the soup generously with salt and pepper to taste.

  5. Step 5

    Serve hot, optionally topped with grated Parmesan cheese or with a side of crusty bread for dipping.
