- 1/4 tsp red pepper flakes (optional)
- 4-5 oz fresh spinach
- 1 tbsp lemon juice
- Salt and black pepper to taste
- Crusty bread for serving (optional)
Preparation
Step 1
Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant, being careful not to burn it.

Stir in the rinsed and drained cannellini beans, vegetable broth, dried oregano, and red pepper flakes (if using). Bring to a gentle simmer and cook for 3-4 minutes, allowing the flavors to meld and the broth to reduce slightly.

Add the fresh spinach to the skillet. Cook, stirring occasionally, until the spinach wilts down, about 2-3 minutes.
