- 4 cups vegetable broth
- 1 cup orzo pasta
- 1 (15-oz) can cannellini beans, rinsed and drained
- 5 oz fresh baby spinach
- 1/4 cup grated Parmesan cheese (or nutritional yeast for vegan)
- 1 tbsp lemon juice
- Salt and black pepper to taste
- Red pepper flakes, optional, for serving
Preparation
Step 1
Heat olive oil in a large pot or deep skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.

Pour in vegetable broth and bring to a simmer. Add the orzo pasta, stirring well to prevent sticking.

Reduce heat to medium-low, cover, and cook for 10-12 minutes, or until orzo is al dente and most of the liquid has been absorbed, stirring occasionally. If the liquid evaporates too quickly, add a splash more broth or water.
Step 4
Stir in the rinsed cannellini beans and fresh baby spinach. Cook for another 2-3 minutes, stirring, until the spinach has wilted completely.
Step 5
Remove from heat and stir in grated Parmesan cheese (or nutritional yeast) and lemon juice. Season with salt and black pepper to taste. Serve hot, garnished with red pepper flakes if desired.
