- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 cup brown or green lentils, rinsed
- 1 (28 oz) can crushed tomatoes
- 6 cups vegetable broth
- 1 tsp dried thyme
- 1/2 tsp smoked paprika
- Salt and freshly ground black pepper to taste
- 2 cups baby spinach
- Fresh parsley, chopped, for garnish
Preparation
Step 1
Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery. Cook, stirring occasionally, until softened, about 7-8 minutes.
