  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups vegetable broth
  • 1 (15 oz) can cannellini beans, rinsed and drained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 4-5 oz fresh spinach
  • Grated Parmesan cheese or a drizzle of extra virgin olive oil, for serving (optional)

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium heat.

    Add chopped onion and cook until softened and translucent, about 5-7 minutes.
