- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz) can cannellini beans, rinsed and drained
- 4 cups vegetable broth
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 1/4 cup fresh basil, chopped, for garnish
- Crusty bread or grated Parmesan for serving (optional)
Preparation
Step 1
Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.

Stir in the minced garlic, dried oregano, and red pepper flakes (if using). Cook for 1 minute until fragrant.

Pour in the crushed tomatoes and vegetable broth. Add the rinsed and drained cannellini beans. Bring the soup to a simmer.

Season with salt and black pepper to taste. If you prefer a smoother soup, you can use an immersion blender to blend a portion of the soup, or carefully transfer some to a regular blender (blend in batches) and return to the pot.
