Cozy Tomato and White Bean Pasta

Sometimes, all you need is a big bowl of comforting pasta, and this recipe delivers! It's super simple, budget-friendly, and comes together quickly using pantry staples. The combination of sweet tomatoes and creamy white beans makes for a surprisingly hearty and satisfying meal that everyone will love.

Ingredients

Yield: 4 servings

Main

  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 ½ cups vegetable broth
  • 1 (15 oz) can cannellini beans, rinsed and drained
  • 8 oz pasta (such as ditalini, small shells, or elbow macaroni)
  • 1 tsp dried Italian seasoning
  • ½ tsp sugar (optional, to balance acidity)
  • ¼ cup grated Parmesan cheese, plus more for serving
  • Fresh basil, chopped (optional, for garnish)
  • Salt and black pepper to taste

Preparation

  1. Step 1

Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook until softened, about 5 minutes.

  2. Step 2

Stir in minced garlic and Italian seasoning. Cook for 1 minute more, until fragrant.

  3. Step 3

Add crushed tomatoes, vegetable broth, rinsed and drained cannellini beans, and sugar (if using). Bring to a simmer.

  4. Step 4

Stir in the uncooked pasta. Reduce heat to medium-low, cover, and cook for 10-15 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking. Add a splash more broth if the sauce becomes too thick.

  5. Step 5

Remove from heat, stir in ¼ cup Parmesan cheese. Season generously with salt and pepper to taste.

  6. Step 6

Serve hot, garnished with fresh basil and extra Parmesan cheese, if desired.

Tips

  • For a touch of heat, add a pinch of red pepper flakes with the Italian seasoning.
  • You can easily add a handful of fresh spinach during the last few minutes of cooking for extra greens.
  • This dish makes fantastic leftovers – the flavors only deepen overnight!
