  • 1 tbsp olive oil
  • 1 lb Italian sausage (mild or spicy), casing removed
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp red pepper flakes (optional, for a kick)
  • 1 (16 oz) package potato gnocchi (shelf-stable)
  • 1/2 cup heavy cream (or half-and-half)
  • 2 cups fresh spinach, roughly chopped
  • Salt and black pepper to taste
  • Fresh parsley or Parmesan cheese for garnish (optional)

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat and set sausage aside.

    Add chopped onion, carrots, and celery to the pot. Sauté for 5-7 minutes until vegetables are softened. Stir in minced garlic, oregano, basil, and red pepper flakes (if using) and cook for another minute until fragrant.

    Pour in chicken broth and diced tomatoes (with their liquid). Bring the soup to a boil, then reduce heat to a simmer, cover, and let it cook for 10 minutes to allow the flavors to meld.

    Add the gnocchi and cooked sausage back into the pot. Continue to simmer for 3-5 minutes, or until the gnocchi are tender and float to the top.

    Stir in the heavy cream and fresh spinach. Cook for 1-2 minutes more, until the spinach wilts. Do not boil after adding cream.
