  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 1/2 cup heavy cream
  • 5 oz fresh spinach
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and black pepper to taste

Preparation

  1. Step 1

    Heat olive oil in a large skillet or Dutch oven over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess grease, then transfer sausage to a plate.

    Add the diced onion to the skillet and cook for 3-5 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.

    Stir in the cooked sausage, heavy cream, and fresh spinach. Cook for 2-3 minutes, stirring, until spinach has wilted. Stir in the Parmesan cheese. Season with salt and pepper to taste.
