Ingredients
Yield: 6 servings
Main
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 large yellow onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 8 cups chicken broth
- 1 tsp dried thyme
- 1 bay leaf
- Salt and freshly ground black pepper to taste
- 4 oz egg noodles (medium width)
- 1/4 cup fresh parsley, chopped (for garnish)
Preparation
Step 1
Heat olive oil in a large Dutch oven or stockpot over medium heat. Add the chopped chicken and cook, stirring occasionally, until lightly browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
Step 2
Add the chopped onion, carrots, and celery to the pot. Cook, stirring occasionally, until vegetables are softened, about 8-10 minutes. Add the minced garlic and cook for another minute until fragrant.
Step 3
Pour in the chicken broth, then stir in the dried thyme and bay leaf. Bring the soup to a boil, then reduce heat to a simmer, cover, and cook for 15 minutes to allow flavors to meld.
Step 4
Return the cooked chicken to the pot. Add the egg noodles and cook according to package directions, usually 5-8 minutes, or until the noodles are tender.
Step 5
Remove the bay leaf. Season the soup generously with salt and pepper to taste. Ladle into bowls, garnish with fresh chopped parsley, and serve hot.
Tips
- For an even richer flavor, use homemade chicken broth.
- If you prefer, you can use a rotisserie chicken for even faster prep; just add shredded chicken with the broth.
- Leftovers are wonderful! Store in an airtight container in the fridge for up to 3-4 days. Noodles may absorb a lot of liquid, so you might need to add a splash more broth when reheating.
