  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1/2 cup egg noodles (or other small pasta)
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary (crushed if whole)
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken from pot and set aside.

    Add chopped onion, carrots, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until vegetables start to soften. Stir in minced garlic and cook for another minute until fragrant.
