Cozy Chicken & Vegetable Noodle Soup

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1/2-inch cubes
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 8 cups chicken broth (low sodium preferred)
  • 1 tsp dried Italian seasoning
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • 4 oz egg noodles (medium width)
  • 1/2 cup fresh parsley, chopped, for garnish

Preparation

  1. Step 1

    Heat olive oil in a large Dutch oven or stockpot over medium heat. Add the chopped chicken and cook, stirring occasionally, until lightly browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.

    Add the chopped onion, carrots, and celery to the pot. Cook, stirring occasionally, until the vegetables begin to soften, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Pour in the chicken broth and stir in the Italian seasoning, thyme, salt, and pepper. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 10-15 minutes to allow the flavors to meld and vegetables to become tender.

  4. Step 4

    Add the egg noodles to the simmering soup. Cook according to package directions (usually 6-8 minutes) until al dente.

  5. Step 5

    Return the cooked chicken to the pot and stir to combine. Heat through for 1-2 minutes. Taste and adjust seasonings as needed.

  6. Step 6

    Ladle hot soup into bowls and garnish generously with fresh chopped parsley. Serve immediately with crusty bread.

Tips

  • For a richer flavor, use homemade chicken broth or add a chicken bouillon cube.
  • If you're using leftover cooked chicken, add it along with the noodles instead of cooking raw chicken separately.
  • Don't add the noodles too early, otherwise, they can become mushy. Add them a few minutes before serving.
