- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts or thighs, cut into 1/2-inch cubes
- 1 medium yellow onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 8 cups chicken broth (low sodium preferred)
- 1 tsp dried Italian seasoning
- 1/2 tsp dried thyme
- Salt and black pepper to taste
- 4 oz egg noodles (medium width)
- 1/2 cup fresh parsley, chopped, for garnish
Preparation
Step 1
Heat olive oil in a large Dutch oven or stockpot over medium heat. Add the chopped chicken and cook, stirring occasionally, until lightly browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
Step 2
Add the chopped onion, carrots, and celery to the pot. Cook, stirring occasionally, until the vegetables begin to soften, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Step 3
Pour in the chicken broth and stir in the Italian seasoning, thyme, salt, and pepper. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 10-15 minutes to allow the flavors to meld and vegetables to become tender.
Step 4
Add the egg noodles to the simmering soup. Cook according to package directions (usually 6-8 minutes) until al dente.
Step 5
Return the cooked chicken to the pot and stir to combine. Heat through for 1-2 minutes. Taste and adjust seasonings as needed.
Step 6
Ladle hot soup into bowls and garnish generously with fresh chopped parsley. Serve immediately with crusty bread.
Tips
- For a richer flavor, use homemade chicken broth or add a chicken bouillon cube.
- If you're using leftover cooked chicken, add it along with the noodles instead of cooking raw chicken separately.
- Don't add the noodles too early, otherwise, they can become mushy. Add them a few minutes before serving.
