  • 1 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup small pasta (e.g., ditalini, orzo, small shells)
  • 1/2 cup fresh dill, chopped (divided)
  • Juice of 1/2 lemon
  • Salt and freshly ground black pepper to taste

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery. Cook, stirring occasionally, for 8-10 minutes until vegetables are softened.

    Stir in minced garlic and cook for 1 minute until fragrant. Pour in chicken broth and bring to a boil.

    Add uncooked pasta to the simmering broth. Reduce heat to medium-low and cook according to pasta package directions (usually 7-10 minutes), or until pasta is al dente.

    Stir in the shredded cooked chicken and about 1/4 cup of the fresh dill. Continue to simmer for 2-3 minutes, just until the chicken is heated through.

  5. Step 5

    Remove the pot from the heat. Stir in the remaining 1/4 cup fresh dill and the lemon juice. Taste and season generously with salt and freshly ground black pepper as needed.

    Ladle the soup into bowls and serve immediately. A crusty bread on the side is a lovely addition.

Tips

  • Use leftover rotisserie chicken for a super speedy soup base. Or, boil chicken breasts or thighs in water/broth until cooked, then shred.
  • If you don't have small pasta, break up spaghetti or linguine into small pieces before adding.
