Comforting Chicken Noodle Soup

There’s nothing quite like a steaming bowl of homemade chicken noodle soup to soothe the soul, especially on a chilly day or when you’re feeling under the weather. This recipe is everything you want in a classic version: rich broth, tender chicken, plenty of noodles, and a medley of fresh vegetables. It's truly a hug in a bowl, and easier to make than you might think!

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 cup chopped carrots (about 2 medium)
  • 1 cup chopped celery (about 2 stalks)
  • 1 cup chopped yellow onion (about 1 medium)
  • 2 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 cup egg noodles
  • 1/2 cup fresh parsley, chopped
  • Salt and black pepper to taste

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken from pot and set aside.

  2. Step 2

    Add carrots, celery, and onion to the pot. Cook, stirring occasionally, until vegetables are softened, about 8-10 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.

  3. Step 3

    Pour in the chicken broth. Add dried thyme and bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.

  4. Step 4

    Add the cooked chicken and egg noodles to the pot. Increase heat to medium-high and cook for another 8-10 minutes, or until noodles are tender and chicken is heated through.

  5. Step 5

    Remove the bay leaf. Stir in fresh parsley. Season with salt and black pepper to taste. Serve hot.

Tips

  • To save time, use a rotisserie chicken instead of cooking raw chicken. Add shredded rotisserie chicken at step 4.
  • If you prefer a heartier soup, consider adding a cup of frozen peas or corn during the last 5 minutes of cooking.
  • For richer flavor, use homemade chicken broth if you have it.
