This recipe is everything you want in a classic version: rich broth, tender chicken, plenty of noodles, and a medley of fresh vegetables. - 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 cup chopped carrots (about 2 medium)
- 1 cup chopped celery (about 2 stalks)
- 1 cup chopped yellow onion (about 1 medium)
- 2 cloves garlic, minced
- 8 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1 bay leaf
- 1 cup egg noodles
- 1/2 cup fresh parsley, chopped
- Salt and black pepper to taste
Preparation
Step 1
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken from pot and set aside.
Step 2
Add carrots, celery, and onion to the pot. Cook, stirring occasionally, until vegetables are softened, about 8-10 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
Step 3
Pour in the chicken broth. Add dried thyme and bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
Step 4
Add the cooked chicken and egg noodles to the pot. Increase heat to medium-high and cook for another 8-10 minutes, or until noodles are tender and chicken is heated through.
Step 5
Remove the bay leaf. Stir in fresh parsley. Season with salt and black pepper to taste. Serve hot.
Tips
- To save time, use a rotisserie chicken instead of cooking raw chicken. Add shredded rotisserie chicken at step 4.
- If you prefer a heartier soup, consider adding a cup of frozen peas or corn during the last 5 minutes of cooking.
- For richer flavor, use homemade chicken broth if you have it.
