- 12 oz spaghetti or linguine
- 1/2 cup unsalted butter
- 4 cloves garlic, minced

- 1/2 cup grated Parmesan cheese, plus more for serving
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
- 1/2 cup pasta water (reserved)
Preparation
Step 1
Cook pasta according to package directions until al dente. Before draining, reserve 1/2 cup of the starchy pasta water. Drain the pasta and set aside.

While the pasta cooks, melt butter in a large skillet or non-stick pan over medium-low heat. Add minced garlic and red pepper flakes (if using) and cook for 1-2 minutes until fragrant. Be careful not to burn the garlic.

Add the drained pasta to the skillet with the garlic butter. Pour in about 1/4 cup of the reserved pasta water. Toss vigorously with tongs until the pasta is well coated and the sauce starts to emulsify.

Remove from heat. Add the Parmesan cheese and chopped parsley, tossing again until the cheese is melted and creates a creamy sauce. Add more pasta water a tablespoon at a time if the sauce seems too dry.
Step 5
Season with salt and black pepper to taste. Serve immediately with extra Parmesan on top.
