- 1 (15 oz) can black beans, rinsed and drained
- 1/4 cup chopped red onion
- 2 tbsp chopped fresh cilantro
- 1 tbsp lime juice
- 8-12 small corn or flour tortillas
- Optional toppings: avocado slices, sour cream/Greek yogurt, salsa, crumbled feta or cotija cheese

Step 1
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a medium bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, 1/2 teaspoon chili powder, 1/4 teaspoon cumin, smoked paprika, salt, and pepper until evenly coated.

Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway through, until tender and slightly caramelized.

While the sweet potatoes roast, prepare the black beans. In a separate bowl, gently combine the rinsed black beans, chopped red onion, chopped cilantro, lime juice, remaining 1/2 teaspoon chili powder, and 1/4 teaspoon cumin. Season with salt and pepper to taste.
